Roasted Tomatoes with Cheese

We love fresh tomatoes! This sweet and delicious fruit is wonderful simply sliced and sprinkled lightly with extra virgin olive oil (evoo) and a little kosher sea salt. They make a deliciously refreshing side dish to any summer meal.

Roasting tomatoes, however, brings out more of the cancer fighting lycopene.

Try this recipe with your next meal. Your family will love it!

  • One small to medium tomato for each person.

  • Slice about a quarter inch or so off the top of the tomato and be sure to carve out the rest of the stemmy part.

  • Sprinkle with a little evoo and kosher sea salt.

  • Top with a grated cheese of your choice and sprinkle with toasted wheat germ.

  • Roast in a preheated 350 degree oven for 15-25 minutes, depending on the size of the tomatoes.

    Caution! Though delicious, these can be incredibly hot inside! Diners may want to slice through them and let them cool a little to prevent scalding their mouths.

    *The tomatoes are also delicious when done on the grill!
