Low GI Lunch Menu Recipes
Grilled Ham and Cheese
2 slices 100% whole wheat bread (stone-milled)2 wedges The Laughing Cow® light cheese
Lightly brush one side of each slice of bread with extra virgin olive oil. Spread one wedge of cheese on the other side of each slice of bread. Place one slice of bread, oil side down in pan. Top with ham and other slice of bread. Cook approximately 5 minutes each side.Tuna Made Easy
6 oz can no salt water packed tuna1 green onion chopped finely2-3 radishes sliced1 celery stalk diced1 tbsp mustard1 tbsp olive oil1/8 tsp cayenne pepper
Mix all above ingredients in a big bowl. Serve on top of dark green lettuce if desired.Cheesy Tuna
1 egg white2 tbsp oatmeal2 tbsp onion, diced1/4 tsp garlic powder2 tsp part skim mozzarella cheeseBlack pepper to taste
Blend all above except cheese. Preheat a skillet and spray with cooking spray.
Form 2 patties and cook on each side until brown (not too long).Sprinkle with cheese and place under broiler until melted. Chef Salad
